Live Smart has a post about eggs, linking to (among other sources) some research by Mother Earth News comparing eggs from free-range, pasture-fed hens to eggs from confined, grain-fed hens. Briefly:
Pasture raised - known as free range eggs contain:
* 1/3 less cholesterol
* 1/4 less saturated fat
* 2/3 more vitamin A
* Two times more omega-3 fatty acids
* Three times more vitamin E
* Seven times more beta carotene
* Three to six times more vitamin D
I am generally quite disappointed in America's food supply, which places profit and convenience far above nutrition and safety. There seems to be plentiful food available, and people eat great quantities, but the quality is poor, deficient in nutrients, less flavorful, and packed with unwholesome things. It's no wonder the nation has serious and growing health problems. "You are what you eat" ... since much of the food supply comes from fattened, over-medicated, forcibly immobile animals, it should be no surprise that a majority of Americans are fat, heavily medicated, and sedentary.

Free-range does NOT mean good, it just means they have more space to run around, but they're still being fed crap.
Pastured egg yolks are radioactive orange, I kid you not. These things glow in the dark, they're so bright, and I think a Coast Guard helicopter saw them through our kitchen window and called them in.
Beating them is like beating a jellyfish. Wow! They're almost stringy with goodness. And the taste?
Foodgasm.
We raised pastured chickens at home, and they were free to wander the yard and the fields all on their own. We had plenty of trouble from predators, but we also shot a lot of them too. We also ended up shooting more than a few dogs, making us none too popular with the yuppie neighbors, but it happens.

I think I know what you mean, but I'm not sure. Help me understand, please?
