Recipe: "Chicken Tortilla Filling"

Yesterday we made creamy mushroom chicken in the crockpot. I forgot to write it down. I also forgot to throw in the extra half-pack of chicken thighs. >_<

So today I made this, which turned out really well. :D


"Chicken Tortilla Filling"

Ingredients:
half of a sweet onion, chopped
half of a 1 1/4 pound package of skinless, boneless chicken thighs, chopped
handful of chives, snipped (about 1/2 cup)
1/4 teaspoon green bamboo salt
1/4 teaspoon green peppercorns
1/4 teaspoon white peppercorns
1/4 teaspoon thyme
1/4 teaspoon rubbed sage
1/2 teaspoon oregano
2 tablespoons light olive oil
burrito tortillas for serving


Directions:

Chop half of a sweet onion and set it aside.

Take half of a 1 1/4 pound package of skinless, boneless chicken thighs (about 3 thighs) and chop them into bite-sized pieces. Set aside.

Pick a handful of chive leaves and snip them into a small bowl, about half-inch pieces. Set aside.

In a mortar and pestle, grind together 1/4 teaspoon green bamboo salt, 1/4 teaspoon green peppercorns, and 1/4 teaspoon white peppercorns. Stir in 1/4 teaspoon thyme, 1/4 teaspoon rubbed sage, and 1/2 teaspoon oregano.

Pour 2 tablespoons light olive oil into an electric skillet and turn on the heat. Add the onions and stir them around. Cook until they break down and start to turn translucent, about 5-10 minutes.

Sprinkle on the spice blend and stir it in.

Add the chicken and stir it around until it is thoroughly cooked, about 3-5 minutes. Turn off the heat.

Dump in the chives and stir until they wilt, about 2-3 minutes.

Scoop filling into tortillas, fold, and serve. You could also put it over sliced bread, rice, or another starch. This makes 2-3 servings. If you want to extend it, figure about 1 chicken thigh per person.


Notes:

I was going for the flavor of fair food in this dish, and my partner Doug confirms that it works. He also suggested adding sour cream at the end, which is along the lines of something else I've been wanting to try, because I love sour cream and chives as a flavor.

Sweet onions are less hot than ordinary onions. Vidalia and Walla Walla are two popular varieties.

Chicken thighs offer many benefits.

Chives are rich in flavor and vitamins, and add a green note to the dish.

Green bamboo salt has an herbal flavor. If you can't find it, use sea salt.

Green peppercorns and white peppercorns have different flavors than black. You can substitute black if that's all you have.
