Today's Cooking

Today I took the leftover raw vegetables (half an onion, half a yellow bell pepper, and half a package of sugar-snap peas) and put them in a crockpot with a quarter pork shoulder, some water, a Maggi cube, a bay leaf, peppercorns, oregano, thyme, and sage.  From this we got:

* 1 meal tonight (2 servings)
* 1 lunch of pork and vegetables (1 serving)
* 1 big baggie of shredded pork to go with mushrooms later (2+ servings)
* 4 small baggies of shredded pork for making quesadillas, etc. (8 servings)

So that's at least 7 meals and 13+ servings from one crock.  Making the mushrooms will be a production, but the meat just needs reheating, so that's convenient.  \o/

I cooked a small beef roast in the crockpot yesterday and my Hubby has already managed to get really creative with it.
We cooked it with Italian Beef seasoning and he took the broth from the meat and cooked red beans in it. It made a lovely bean soup.
We've also had several sandwiches of it and Monday night we'll have mashed potatoes with the sliced beef in a gravy.

That's interesting. I usually use the meat separately.
