The Banana Man

 ... grows 430 varieties of bananas and plantains.  American stores have at most 4 varieties (large yellow, fingerling yellow, and red bananas plus plantains).

On my list of Things to Do with Entirely Too Much Money is a collection of apple trees.  One apple tree of every type I could get my hands on.  I'd need two locations, though -- applies divide into northern and southern varieties -- and I'm dubious that Illinois would currently be ideal for either given its shifting zones.

You don't have to have a huge amount of money to have an apple orchard.
Learn how to graft and then buy some dwarf rootstock trees to graft your scionwood on. The best place to buy the rootstock trees are here: https://www.cumminsnursery.com/
