Spruce can be used to make soda or beer . I have had the soda, at a con where Canada was bidding on Worldcon and handing out interesting foods and beverages. They gave me a whole can because nobody else liked the spruce soda. It's far more fragrance than flavor, but it's like drinking Christmas. :D I would love to try cooking with it, as an adjunct to rosemary and sage. I think it would be good on poultry, and possibly for making pine tree cookies.
