Michelin Greenwashing

The Michelin Star restaurant rating has recently added a "sustainable" marker.  Problems with this include:

* They didn't make an effort to document and prove concrete steps toward sustainability taken by each restaurant/chef.  A verbal claim sufficed.

* The whole gourmet industry is built on a lot of unsustainable practices.

* It was cooked up by a tire company to encourage more driving in France, which is the opposite of helpful with sustainability.

You want to be sustainable?  Learn to cook all the edible parts of an ingredient.
