A replacement for Spanish rice, using quinoa.
Fairly simple saffron quinoa with green onion and herbs.

Saffron quinoa with strawberries, peas, red onion, chive blossoms, and pistachios. I like those things, but not all together. I would probably do peas, chive blossoms, and pistachios or strawberries and red onion.
Quinoa chicken, although I'd probably replace the tomato/pepper stuff with mixed vegetables.

Quinoa, black beans, and corn; another variation on quinoa with stuff in it.
A very interesting lemon-celery quinoa side dish. First, this would use leftover celery after making spaghetti sauce; and second, it sounds good with lemon-pepper chicken or salmon.
Meatballs and meatloaf; again, I'd tinker with the flavorings but the basic concept is sound.
Quinoa casseroles -- it goes in raw and bakes in the oven, so no more fuss than average for a casserole.
Crockpot quinoa and vegetables.
Crockpot BBQ chicken quinoa -- we could probably make this with leftover chicken.
Crockpot quinoa sloppy joes, needs work on flavoring but good concept, especially if it can be frozen and thawed later.
