Recipe: Ice Milk

I made this earlier this year, knew I'd written down the recipe somewhere but couldn't find the darn thing. Tonight I went looking through a notebook for something else and found it. Yay, yay!


Ice Milk


Ingredients:
1 cup 2% milk
2 cups half-n-half
3/4 cup sugar
2 teaspoons vanilla extract


Directions:

Pour 1 cup 2% milk into a large bowl. Add 3/4 cup sugar and whisk until dissolved. Whisk in 2 cups half-n-half. Add 2 teaspoons vanilla extract and whisk thoroughly.

Turn ice cream machine ON. Pour milk mixture into ice cream machine and freeze for 25 minutes.


Notes:

I discovered this excellent ice milk recipe by accident: I needed to make vanilla ice cream, and thought I had some cream and whole milk left. I didn’t, so I used what I had. The result tastes like the best ice milk bar or ice milk sandwich filling. If you like a lighter frozen dessert than heavy ice cream, try this.

This is also excellent with coconut flakes sprinkled over it.

It sure is. This is an ideal "base" for pretty much any kind of dessert topping: fruit, chocolate sauce, caramel, etc. Top with whipped cream and nuts if you wish.

I wonder if this could be done with soymilk. I have low lactose tolerance but it sounds really yummy. You could make ice cream bars if you have a mold and some popsicle sticks. Put some chocolate shell sauce over it and go mmmmmm!

The first time I read your subject line, I misread it, thinking you said "rice milk"! But speaking of which, have you ever tried rice milk? It tastes so good homemade, with a little cinnamon. My sister makes good rice milk. Rice ice milk would be delicious.

I have not tried this, because I don't get along with soy myself, but it's worth experimenting for people who do. Different substances respond differently to freezing, so it might need to be tweaked.

I don't like rice milk myself, but I have made ricecream. Well, huh ... I thought I'd posted that recipe, but apparently not. I shall post it now.
I must be tired, because "whisk" got turned into "whiskey" by my brain.
That kind of thing happens to me too. However, you can put alcohol into ice cream, and whisky is a good choice. Brandy and rum also work. Add sparingly because alcohol makes the ice cream more difficult to freeze.
