Rabbit Cacciatore

Here is a recipe for Rabbit Cacciatore.

Regarding the author's unfortunate introduction to rabbit: people generally don't keep huge herds of rabbits as pets. If you see them by the hundreds, they're either food or lab critters. Me, I think rabbits look ... appetizing.

Off topic, but I just had to say that I love your icon! :D
I made a handful of icons to express particular emotions or body language, mostly using animals. Even when I'm wearing a human body, some of my friends can tell when my ears perk.

Rabbits are delicious.

The first time I saw a guinea pig I thought it looked incredibly edible.
Guinea pigs are edible. They were a traditional meat source in some parts of Central and South America, much like rabbits.
Oh, I know. :) I felt very vindicated when I found out, because when I thoughtlessly expressed my observation (as small children often do) the people around me (including the guinea pig's owner) did not at all appreciate it.

Odd as it is, guinea pigs were originally domesticated for meat by the natives of South America.

I would probably eat rabbit, if it was prepared well. (I eat lamb and veal, too, so why not?) I've never seen it in any of the specialty grocers or farmer's markets I've been to, though, so I've never had the opportunity, either.

Keeping rabbits as a food source makes sense to me, so I suppose that's informing my opinion somewhat. Even the British government encouraged housewives to breed rabbits for food during WWII, so there you are. :)
Rabbits are excellent food animals because:

* They breed and grow fast.
* They are easy to raise.
* They don't take up much space.
* They produce meat that is nutritious and not too fatty.
* They produce a lot of edible meat compared to the food they eat.
* They grow best on commercial meat-rabbit food ... but you can feed them kitchen scraps or even pen them in the yard to graze, so they can be very cheap to feed.
I love the idea of eating rabbit, but I'm not sold on the taste.
Rabbit is one of those meats, like frog or duck, that's easy to ruin by cooking it wrong. It's good fried at low to moderate temperature, or stewed; but if you cook it too hot or long, it dries out.
The rabbit I had was in a stew, but it was at a very expensive, exclusive french resturant.

I know they did a much better job than I could have!

I always said I'd like to try rabbit, then I handfed two baby bunnies. Can't do it now. I couldn't even watch the Iron Chef where the secret ingredient was rabbit! If I ever have to handfeed a calf or baby chicks, I may have to become a vegetarian. ;)
