"Apple-Flavored Pork Steaks"
Ingredients:
2 pounds pork steaks
sea salt
smoked black pepper
2 cups lamb stock
apple juice
1/2 teaspoon rubbed sage
1/2 teaspoon thyme
Directions:
Rinse and pat dry the pork steaks. Sprinkle them with sea salt and smoked black pepper. Layer the pork steaks in a crockpot.
Add 2 cups lamb stock, plus enough apple juice to cover the meat. Add 1/2 teaspoon rubbed sage and 1/2 teaspoon thyme. Cover the crockpot and turn on High.
Cook for about three to four hours, or until the pork steaks fall apart. Serves 3-4 people.
Notes:
This recipe should work just as well with pork chops.
Sea salt has a mellower, more complex flavor than table salt, but plain table salt is fine if you don't have sea salt.
Smoked black pepper adds a richer note to counterbalance the sweetness in this recipe, but plain will also work.
I used lamb stock because it's what I had. Usually I'd use beef; chicken is okay.
The acid in the apple juice helps tenderize the meat. Apple cider is great if you have it. Any acidic fruit juice should work -- orange and pineapple are particularly tasty with pork.

"Apple-Yam Casserole"
Ingredients:
4 cooking apples
3 medium yams
1/2 cup butter
1/2 cup brown sugar
1/2 cup apple juice
1/8 cup tapioca starch
1 teaspoon Saigon cinnamon
1 teaspoon powdered ginger
Directions:
Preheat oven to 400ºF.
Wash and peel the yams. Cut them in the thinnest possible slices. Put the slices in a bowl.
Core the apples and cut them into slightly thicker slices. Put the slices in another bowl.
Spray a 9 x 13" baking dish with non-stick cooking spray. Layer apples and yams to fill the dish.
Melt 1/2 cup butter in a bowl. Add the 1/2 cup brown sugar and 1/2 cup apple juice. Stir to combine. Add 1/8 cup tapioca starch, 1 teaspoon Saigon cinnamon, and 1 teaspoon powdered ginger. Stir until fully mixed. Carefully pour the glaze over the apples and yams.
Cover the baking dish with foil and cook at 400ºF for 1 to 1 1/2 hours. Use a toothpick to test whether the apples and yams are tender. Serves 8.
Notes:
Cooking apples hold their shape and flavor well, including varieties like Granny Smith and Fuji. Multipurpose apples like Macintosh or Rome also work.
Yams or sweet potatoes are flavorful and nutritious. Slice them finely because they take a long time to cook. You need the same amount of apples and yams.
Tapioca starch is a thickener that produces a glossy, slightly sweet glaze.
