Really liked the stained glass cookie--don't see why you couldn't figure out another stained glass design to use during the rest of the year.
Back when I was a kid, they had a kid's cookie recipe called paintbox cookies which used a "paint" made with food coloring and egg white. They were easy and fun to make.
