You'd think removing the pollen would be a good thing, seeing as many people are allergic to it.

Stores lie all the time. There are bulk honey boxes in Winco that are labeled, "Do not lift lid; bees will escape." I lifted the lid out of curiosity once, and there's no bees or even a space for them in there; it's just a plastic container full of honey. They only put that stupid lie on there to keep people from messing with it, but I suspect it's counterproductive for most people.
Pollen has protein; it makes honey more nutritious, not just empty calories. It affects flavor. It also lessens allergies for many people, although that requires local honey, without about 20 miles or so.
Ah, okay. Cool. I have learned something new today.
