I like liver, but I usually feel that the onions are there just to obscure the flavor of the meat. I also like brussels sprouts, properly cooked.

Then one adds some flavor. Imagine those sprouts in a soup stock, turned into a kind of cabbage substitute for a gumbo or stew (perhaps chopped into chunks, too). Try new herbs and spices on the liver. Something that isn't the same old standby, because that old standby was usually about what's cheapest, not what's best.

Many different things can be done with food. It's good to explore.
