For some reason this reminds me of a friend's story about a Chinese restaurant in Midland, Michigan. I don't know how it is in the real world but here on the Peninsula we have a lot of Chinese restaurants that take over defunct A&W or Tastee Freez places and then proceed to sell large amounts of stewed goodness at ridiculously low prices. This was one of those.

He'd go in there and they'd have Chicken Chop Suey, $2. Beef Chop Suey, $2. Pork Chop Suey, $2. Meat Chop Suey, $1.50.

Meat Chop Suey?

He always got Meat Chop Suey. Pretty good, he says.
One possibility is that they simply used excess or scrap meat from one or more of the other categories, and gave people a discount because there was no guarantee what it would be that day.
