The biggest eco-challenge, for me, would be getting someone to perform the handfasting. I don't know of any local pagans who are registered ministers capable of performing a legal marriage. I'd likely have to fly one in from Toronto.
There is always the option my (atheist, apathetic) friends used - have the legal ceremony performed by the JP and then have a good friend perform the ceremony (don't do what they did to me and ask 4 days before!)

Or Universal Life (?) can ordain people online, when you want a legal handfasting.
I kinda like the idea of the legal marriage being performed by the same person doing the social marriage, but yeah, I've heard of it being done that way.
